(In the absense of any in-game info I'm aware of my raptor, springer, jackal and warclaw are male - and the beetle of course - and the skimmer, griffon and skyscale are female, mainly to fit the names I gave them.)

Huh. Neat. Didn't remember that!

I trust Gorrik as an Asuran researcher took the time to learn how to communicate with Skyscales so that he could ask what our story mount skyscale identifies as.

Either that or he checked to see if the skyscale had a dongle or not.

If the skyscale had a double dongle, we can safely assume the skyscale is an Apple iPhone.

Oof, rude but funny ;)

In which case it has dongle privelege.

The roller beetle is "Petey" presumably because it is male, and the Skyscale is female.

I think Arenanet missed an opportunity with raising the Skyscale here. We got to "pick" our own egg to carry around for all the collections, but not really. I wish we truly would have been able to pick 1 of 21 slightly different sized and colored eggs. The resulting Skyscale could be 50/50 male or female, with the pronoun Gorrik chooses determining what sex we got. We could also have a different randomized base color for our baby Skyscale (which would be changeable once the mount is unlocked, but still). It would personalize OUR chosen Skyscale a little bit.

Well he, she, or undefined by rare chance which gives you an extra skill that launches hell-fire missiles and makes helicopter noises.

You just reminded me of Creatures, a game I played in the 90's. I'd have loved that option. It would be a real nostalgia trip.

Well, people theorised Petey’s name came first, then gender, because Pete/Petey is known as a masculine name.

The name Petey was theorised to come from the breed of Scarab that Gorrik bred him from (Pestilentix Termitroxus, or PT, hence “Petey”). This terminology for the scarab breed is referenced in Forearmed is Forewarned, from Long Live The Lich.
