Because when they come up it states when the build will go online. If you had been 10 seconds later than you did, you would've gotten them all at once.

Sometimes there's unforeseen problems with a new build. It might work fine on their internal servers, but when they move it to Live bugs appear or someone notices something their QA department missed. So then they need to follow up with a patch to fix that. Sure they could wait a day or two to collect as many problems as possible and fix them all together, but that would leave all those bugs in-game for that entire time. Since they don't need to take the game offline to update there's no benefit to doing that, so it makes more sense to fix them ASAP.

I've never objected to working late so I can start my holiday break with everything out of the way. I'm betting that's also a part of why they're fixing things ASAP right now.
