They will progressively go down and I don't feel the need to hold onto them, so I just sell them every time I have a full stack

Essentially, prices fall substantially between opening of any festival and closing, with the rate of falling dependent on demand for gift-dependent shinies. This past year, it fell nearly 50% in a few weeks; the year before, only 30%.

 

Prices usually fall or hold steady for a few months afterward: the impatient liquidate some of their stacks each week, while investors with more space hold off until the price rises again. The Wintersday Gift peak price is reached traditionally between during the summer, although sometimes the first hour or day of the festival is good, too.
