as far I see it, they couldnt make the map dependent on the griffon, as many casuals doesnt have it or isnt skilled enough to aquire it.

Perhaps a new mastery to allow the griffon to use updrafts would solve the flying issue without needing a new mount, and making longer airborne periods and fights viable. Of course the map would need a ton of them.

But that comes with its own caveat of requiring the griffon to be unlocked to play the episoide, unless you can do it when gliding too. Like in bloodstone fen you got skills to attack with while gliding.
